School kitchen workers took part in Shadow a Chef training on St. Thomas and St. Croix

School-based kitchen service workers across the U.S. Virgin Islands took part in the second phase of the Shadow a Chef Enrichment Program on October 18, 2019, on St. Thomas and October 21, 2019, on St. Croix, according to Government House.

The training was held as part of an AFT Teach professional development day. The program was divided into two parts: food handling and safety instruction, and hands-on meal preparation techniques.

Food handling and safety presentations were led by Juanita Johannes, assistant director for the Division of Environmental Health, and Wanson Harris Jr., director of Environmental Health.

On St. Thomas, chefs Larry Nibbs and Shamoy Burton participated in the training. On St. Croix, chefs Ralph Motta, Lamar Bough and Frank Robinson led sessions on food preparation, menu development and product enhancement. Participants in both districts prepared and ate a complete meal using federally approved food items.

During the St. Croix session, workers honored Sandra Cartier, kitchen manager at Juanita Gardine Elementary School, who had died.
